Here in Texas we have to take advantage of the chilly days – we know chilly is relative, but it was spring here last week. Seriously, it was still cutoff season on Christmas Day… So when we finally reach the 40s, it is time to make soup! We luv a good soup in this home! This one is spicy and easy. YUM!
Ingredients:
32 ounces chicken broth
1 teaspoon of chicken flavor Better Than Bullion
1 can of Rotel tomatoes
1 pound jalapeno Velveta cheese
4 cups of cooked chicken breast
3 cans of great northern white beans drained
2 tablespoons of cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon sugar (our Gan says to put a little sugar in everything)
Toppings:
grated cheese
sour cream
cilantro
Fritos
Combine ingredients in a large pan or dutch oven in the order they are listed. Let simmer for about 20 minutes. Serve it up, and top it with grated cheese, sour cream, cilantro, and Fritos. Everything’s better with Fritos! We hope you enjoy!
