German Oven Pancake Recipe

Summer came home from Nashville to visit a couple weekends ago for the first time since leaving for college in August. It was pure bliss to have my girl home for three days. Words cannot express the soothing joy I felt that Saturday morning when I awoke to a hushed house knowing both of my kiddos were asleep under one roof! Before Summer came home, I asked for her home-cooked meals request list. I knew it would be a whirlwind trip, but I wanted to make sure we squeezed in a few of her favorites. My German Oven Pancake with homemade syrup made the coveted menu, so I thought it was worth sharing.

German Oven Pancake:

3 tablespoons of butter

1 cup of flour

1 cup of milk

3 tablespoons of sugar

1 teaspoon of cinnamon

1 teaspoon of vanilla

1/8 teaspoon of salt

2 eggs

Preheat oven to 350 degrees. Melt 3 tablespoons of butter in a 9 x 13 glass pan. Put the rest of the ingredients in a blender and mix until smooth. Pour the batter into the glass pan with the melted butter and bake for 25 minutes.

While the pancake bakes, make the homemade syrup.  This is what makes this recipe.  DO NOT use store bought syrup. You will be sorry!

Buttermilk Syrup:

1/2 cup butter

1-1/2 cups sugar

3/4 cup buttermilk

2 tablespoons corn syrup

1 teaspoon baking soda

1 teaspoon vanilla extract

Place all of the ingredients except the vanilla in a saucepan on the stovetop. Bring to a boil and cook for 5 minutes.  Remove from heat and stir in the vanilla.

Remove the pancake from the oven.  Serve with warm syrup, berries, and fresh whipped cream. This made Summer’s luv list, and I hope it makes yours too!autumn signature
