We recently invested in a Vitamix blender. We luv it and have had fun experimenting in the kitchen. One of our favorite new concoctions is homemade tomato soup. We played with the recipe, and decided this combination is our favorite. If you don’t have a Vitamix, no worries, any blender will do. Put all the ingredients except the heavy whipping cream into any blender and mix until smooth. Then, pour it into a pot, add the whipping cream, and heat it up on the stove until it is hot and bubbly. Enjoy!
Tomato Soup:
2 tablespoons butter
1 small yellow onion
3 cloves garlic
1 (24 ounce) can crushed tomatoes
2 cups chicken broth
1 5oz. can of tomato juice
1/4 cup parmesan cheese
2-3 tablespoons chopped fresh basil
1 teaspoon chicken Better Than Bullion
1/2 teaspoon salt
1/2 teaspoon pepper
2 1/2 teaspoons sugar
1/4 to 1/2 cup heavy whipping cream
