7UP Bundt Cake Recipe
It’s been a while, but we are hoping to slide back into a blogging routine, and a recipe seemed like the perfect place to start. This is a super easy bundt cake that we’ve been making for years. It’s dense, but not too heavy, and great with berries too.
The Cake:
3 sticks room temp salted butter
3 cups white sugar
5 room temp eggs
2 tbs fresh lemon juice
2 tbs fresh lime juice
2 tsp vanilla extract
1 cup 7UP Soda
3 cups all-purpose flour
The Glaze:
2 cups powdered sugar
1 tbs almond extract (yes, almond!)
2 tbs of melted salted butter
1-3 tbs of heavy cream
Preheat oven to 325°. Liberally (and I mean liberally) grease and flour a bundt pan. If you think you've greased it well, grease it again.
Cream together the butter and sugar with a mixer until light and fluffy, about 2 minutes. Mix in the eggs in one at a time, beating well after each one. Mix in the fresh lemon and lime juice and vanilla extract. Then, alternating with 7-Up and flour, add each gradually and beat until a thick and smooth batter comes together.
Pour the batter into the prepared (very well greased and floured!) bundt pan and bake for approximately 60-70 minutes, or until a toothpick inserted near the center comes out mostly clean. Leave it in the pan for about 20 minutes before carefully inverting to a cake plate to cool completely.
To make the glaze, first, whisk together the powdered sugar, almond extract, and melted butter in a medium bowl. Then, add in heavy cream 1 tbs at a time until you get the desired smooth consistency. Pour on top of the cake. Then, slice, eat, and enjoy!
